🛒 Ingredients
- 6–8 sausages (beef, pork, chicken — whatever lives in your fridge/freezer)
- 4 medium potatoes, chopped into chunks
- 2 carrots, sliced
- 1 onion, cut into wedges (optional but worth it)
- 2 tbsp olive oil
- 1 tsp paprika
- ½ tsp dried mixed herbs or Italian herbs
- Salt & pepper, to taste
Optional Add-Ins:
- Sweet potato instead of regular potato
- Zucchini or capsicum
- A drizzle of honey + mustard at the end
🍳 Method
Step 1
Preheat your oven to 200°C and line a large baking tray with baking paper (future you will appreciate this).
Step 2
Add to the tray:
- 4 chopped potatoes
- 2 sliced carrots
- 1 onion (if using)
Drizzle over 2 tbsp olive oil, then sprinkle with 1 tsp paprika, ½ tsp dried herbs, salt and pepper.
Toss everything directly on the tray until coated.
Step 3
Nestle 6–8 sausages on top of the vegetables.
Step 4
Bake at 200°C for 35–45 minutes, turning sausages halfway through, until:
- Potatoes are golden
- Sausages are cooked through
- Everything smells like you planned ahead
If you want extra colour, switch to grill for the last 3–5 minutes.
