🛒 Ingredients
- 500g beef mince
- 1 onion, diced (optional but recommended)
- 2 cloves garlic (or 1 tsp jar garlic)
- 1½ tbsp mild taco seasoning
- 1 can (400g) diced tomatoes
- 1 cup uncooked rice
- 1½ cups beef stock or water
- 1 cup corn kernels (frozen or canned, optional but great)
- Salt & pepper, to taste
- 1 tbsp olive oil
Optional Toppings:
- Grated cheese
- Sour cream or Greek yoghurt
- Avocado
- Chopped tomatoes
- Lime wedge
🌮 Method
Step 1
Heat 1 tbsp olive oil in a large deep pan over medium heat.
Add 500g beef mince and cook until browned.
Step 2
Add 1 diced onion and 2 minced cloves of garlic. Cook for 2–3 minutes until softened.
Step 3
Stir in:
- 1½ tbsp mild taco seasoning
- 1 can diced tomatoes
- 1 cup uncooked rice
- 1½ cups stock or water
- Corn if using
Mix well.
Step 4
Bring to a gentle simmer, then reduce heat, cover, and cook for 15–18 minutes, stirring once or twice, until rice is tender and liquid absorbed.
If it looks dry before rice is cooked, add a small splash of water.
Step 5
Turn off heat and let sit for 5 minutes before fluffing with a fork.
Top with cheese and let it melt slightly before serving.

- Scooped into tortilla wraps if we’re feeling upgraded
- In bowls with avocado if I’m pretending this is planned
