🛒 Ingredients
- 500g beef mince
- 1 onion, diced
- 2 cloves garlic
- 1 can diced tomatoes
- 1 tbsp tomato paste
- 1 tsp dried Italian herbs
- ½ tsp paprika
- Salt & pepper
- 1 cup risoni (or small pasta)
- 1½ cups stock or water
- ½–1 cup grated cheese
Optional:
- Handful baby spinach

- In a large pot, brown 500g beef mince.
- Add onion + garlic. Cook 2–3 minutes.
- Stir in diced tomatoes, tomato paste, herbs, paprika, salt and pepper. Simmer 5 minutes.
- Add 1 cup risoni and 1½ cups stock.
- Simmer 12–15 minutes until pasta is tender.
- Stir through cheese (and spinach if using).
Let sit 5 minutes before serving.
