🛒 Base Ingredients
- 1kg beef mince
- 1 large brown onion
- 2–3 cloves garlic (honestly I use about 8 because you can never have too much garlic in anything)
- 2 cans diced tomatoes
- 2 tbsp tomato paste
- 2 tsp Italian herbs
- 2 tsp paprika
- Salt & pepper
Risoni ingredients:
- 1 cup risoni (or small pasta)
- 1½ cups beef stock or water
- ½–1 cup grated cheese
Optional:
- Handful baby spinach
Cheesy Beef Taco Wrap Filling ingredients:
- 1 tsp cumin
- 1 tsp mild taco seasoning
- Salt & pepper
Optional:
- 1 cup corn or black beans
🍳 Method Overview
Step 1: Cook the Base
Brown the full kilo of mince with 1 large brown onion diced and as many minced garlic cloves as your heart desires.
Add 2 cans diced tomatoes, 2 tbsp tomato paste, 2 tsp Italian herbs, 2 tsp paprika (smoked), salt and pepper to taste.
Simmer 10–15 minutes.
Step 2: Split
Divide mixture into two halves.
Half A → Risoni
Add 1 cup risoni (or small pasta), 1½ cups beef stock or water and ½–1 cup grated cheese (and optional baby spinach).
Simmer until pasta is cooked through.
Half B → Taco Filling
Add 1 tsp cumin, 1 tsp mild taco seasoning and extra salt & pepper for taste and optional 1 cup corn or black beans if using.
Simmer until everything is heated through.
Now you have:
